As a Texan visiting CO Springs I had to sample some of this Colorado Texas BBQ. The atmosphere was authentic Texas road house as interpreted by this friendly and rightfully proud Houston crew. We had the Texas Trinity of pork ribs, brisket, and sausage. The ribs were tasty, but not quite fall-off-the-bone, the brisket was moist and fall-apart with plenty of brisket fat (BBQ butter) for the included bread. The standout for me was the jalapeno cheddar sausage that had some serious bite balanced by the sharp creaminess of the cheddar. Great sides, highly recommend the brisket elote. Admirable potato salad as well. A help-yourself pickle and pickled onion bar was a welcome treat. Standing room only with a line out the door on a Saturday afternoon, and you can see the smoke billowing outside as you drive up. All reinforced the notion that you can successfully transplant TX BBQ to Colorado if your staff and your clientele are onboard the program. The only bummer was they were out of Texas Twinkies (IYKYK) by 2pm. Gotta get there early on weekends.

Being a native Texan traveling the country, it's always a special treat to find AUTHENTIC TEXAS BBQ. The Chuckwagon is just that! We tried some of everything and it was all delicious! The owners were gracious and friendly. They go to great lengths to make sure your meal is satisfactory. I have no doubt that they would make TM top 10 if they were back in TX. They use Nolan Ryan beef and even bring in Texas Oak and Jalepenos to help insure the true flavors.

Great family run place. Highly recommend the garlic sausage! The tater bomb is also amazing. Get there early or you won't get any food, this place runs like a traditional BBQ restaurant, when they are sold out that's it.

This place is the best BBQ I have ever had. My partner even said this beats a place outside Austin, Texas. The atmosphere was nice and servers were super friendly. I didn't even mind waiting in the long line is was totally worth it.

Got there as soon as it opened and there was already a line. This is one of those places that sells until they sell out. The wife and I got the Texas Trinity: brisket, pork ribs, and sausage (garlic pepper jack) and for sides we got elote (pretty sure it had chipotle mayo) and beans. All that was amazing! Some of the best brisket I've ever had. Of course I also had to get the beef Dino rib. Just one but the meat has the same consistency as the brisket and it peeled off the bone like peeling off a glove. The bone was as big as my forearm. Great service, good people, and delicious food. I can't wait to go back and try more.

BBQ with real passion and love! Delicious brisket in Colorado Springs! What a burned ends! What a staffed peppers! It’s not recommendation it’s request please don’t lose this chance to enjoy all of this staff! And if you planning to visit Charleston please respect and don’t have your breakfast before.

My job catered in The Chuckwagon today & I must say, I am extremely impressed. I’m from Texas and this was hands down the best brisket I ever had. It melted in your mouth like butter. Everything was fabulous. From the potato salad to the Mac n cheese. Job well done guys! I will definitely be bringing my family in.
